1. Sheep’s Milk Feta                             Southwestern, France                 w/ Watermelon
French sheep’s milk feta has a lighter consistency and less salt than its Greek cousin. A perfect partner to refreshing spring-time melons with fresh mint.

Adami Giradino Prosecco                   
A velvety sparkling wine with a fruity fragrance and a dry finish, clean and refreshing. 

2. Caprea                                              Amalfi, Italy                               w/ Grilled Local Asparagus 
The freshest goat’s milk cheese form the Amalfi coast in southwestern Italy. Lemon and cracked wheat make this cheese ideal for wheat beers.
                                     
Caracole Troublette
From the Brasserie Caracole in Belgium this witbier is lemony, crisp, and lightly spiced throughout its creamy pale cloudy body.

3. Keen’s Cheddar                                Somerset , England                    w/ Pulled Pork
The Keen brothers make this exceptional cheddar in the old style, with a slight sharpness and lemony finish which pairs well with this fatty and sweet pulled pork.

Founders Devil Dancer IPA
A double IPA with a super amount of hops; dry, thick and very alcoholic (13%), sweet citrus and caramel match with the weighty pulled pork and bright cheddar.

4.Vendeen Bichonne                           Brittany, France                          w/ Banana Glazed Sticky Ribs
Grassy, buttery and nutty cow’s milk from the lush, sea-side pastures of western France, with a slight plantain aftertaste; this matches well with the spicy banana glazed ribs.

Funaguchi Saki
The only unpasteurized saki in the U.S.; this crisp, fresh and seamless Saki is a favorite in Japan after work 

Palate Cleanser – Boston Baked Beans w/ Capri Log from Westfield Farms
Our sweet baked beans with a fresh goat cheese for a different twist.  

5. Pecorino Morchiato “Rosso”        Pienza, Italy                               w/ Grilled Peaches
This 90 day aged sheep’s milk cheese is washed with tomato paste giving it a citrus finish that should pair nicely with the caramelized peaches.

Livelli                                                  Puglia, Italy
A light and juicy red from the limestone hills of the Murge district in Puglia. 100% Negroamaro, a common grape varietal found in southern Italy.

6. Mrs. Kirkham’s Lancashire          Lancashire, England                   w/ Chipped Beef Brisket
Farmhouse clothbound cow’s milk made by a mother and son team. Lemony, creamy and sharp with a unique biscuit-y texture.     

7. Bartlett Blue                                    Greensboro, Vermont               w/ Pulled Lamb Shoulder
Jasper Hill Farms classic blue made from their small herd of Ayrshire cows put to fresh pasture after every milking. Similar to Stilton but rounder and more caramelized.

Rogue Chocolate Stout
Chocolate beer, need we say more? This is a daring pair but the thick Rogue brewery malty beer will balance with the Bartlett and rich pulled lamb shoulder. The beer is used in the lamb’s Q sauce to bring things full circle.
